Tasty Vegetarian chili

Boca meat crumbles are tasty soya that you can use that has an appearance of minced beef or chicken. You can use it to make tasty chili or even soya with pasta
Here is my recipe.

Prep time: 1 hour (estimate)

Ingredients
1 pkg of boca meat crumbles (12oz)
1 can of Black beans/ Red beans (8oz)
1 onion finely diced
1 pimento pepper
1 large garlic clove finely diced
3/4 cup of corn
3/4 cup of red and green pepper diced
1 cup of Pasta sauce
1 pkg of McCormick original chili
2 cups of water
2 tbs of brown sugar
1 tbs of olive oil
dash of salt
1 tsp of paprika
1 tsp of chili powder
1 tsp of Italian seasoning

In a large saucepan heat sugar and oil till sugar turns brown, then add boca crumbles and stir into brown sugar then add back beans, onion, pimento,garlic, corn, sweet peppers and water. Let simmer for 5 mins then add remaining ingredients. Cover and let simmer occasional stirring and adding water if needed for 30 mins.

Serve with brown rice or whole wheat pasta.


Vegetarian Chicken Salad

Lately I find myself trying out different recipes seeing that my husband is vegetarian and learning to cook for a vegetarian could have it ups and downs.
Vegans are people who follow a strict vegetarian diet which excludes all meat, dairy products, eggs and any product that comes from animals. Also some vegans refuse to use animal products such as leather and silk.
Vegetarians are a tricky term because many people label themselves vegetarians but still eat eggs, occasional meat or seafood and dairy products.

One day my husband and I was ordering from a  bagel shop and I was feeling for a yummy chicken salad on a toasted bagel, even now it still make my mouth water hmmmm. Anyway it looked so delicious that he started to search for stores that sell vegetarian chicken salad. Just to clarify vegetarian chicken is either mock chicken, Tempeh or even chick peas made to have an appearance and taste like chicken. Because I couldn't find mock chicken, I decided to use soy Tempeh which you can find at a Co-op or sometimes vegetarian and natural food stores. Tempeh is made from cooked and slightly fermented soy beans also includes soy which is high in protein and calcium.

Here is my Tasty Vegetarian Chicken Salad

Preparation Time: 45mins

1 pkg of soy Tempeh (8.oz pkg)
1 small celery stalk diced small
1 small carrot diced small
1/2 onion diced small
2 tbs of vegan mayonnaise/ regular mayonnaise
1 tbs honey mustard
dash of salt (to taste)
dash of paprika (to taste

Cut tempeh into 4 quarters. In a medium saucepan simmer soy tempeh for 15-20 minutes add a little salt.
After put in a bowl and crumble with a fork. let cool in the refrigerator for 20 mins.
In a medium bowl combine tempeh and all other ingredients together. Mix well and refrigerate for 5 mins.

Enjoy on a toasted wheat bread.
